Taboulleh (Parsley-Wheat Salad)

 

Ingredients:

 

½ cup fine cracked wheat (#1burghul)

5 – 6 cups parsley, well washed and finely chopped (about 5 large bunches)

1 cup fresh mint, finely chopped or 2 tbsp of crushed dried mint

8 green onions, finely chopped

4 large tomatoes, finely chopped

2 tsp salt

½ tsp pepper

½ cup fresh lemon juice (or to taste)

½ cup olive oil

 

Directions:

 

1.       Rinse cracked wheat and soak in cold water for 20 minutes.

2.       Drain cracked wheat well, squeezing out excess moisture with hands and place in a large bowl.

3.       Add lemon juice, oil and seasoning to cracked wheat and set aside.

4.       In a separate bowl, combine parsley, mint, onions and tomatoes, and then add to cracked wheat mixture.

5.       Toss just before serving.
