Lebanese Bread (Food Processor Version)

 

Ingredients:

 

1 pkg active dry yeast

¼ cup warm water

1 tsp sugar

3 ¾ cups of flour

1 tsp salt

1 ¼ cups cold water

¼ cup oil

 

 

Directions:

 

1.       Mix yeast and sugar in ¼ cup warm water. Set aside and let rest for 10 minutes.

2.       Place flour in food processor bowl.  Add salt.

3.       When yeast mixture has doubled in size, add to flour mixture.

4.       Mix cold water with oil to make 1 ½ cups liquid.  Slowly pour liquid through tube of food processor and let run until dough forms a ball (approximately 40 seconds).

5.       Remove dough from machine, shape into smooth ball. Place in a well-oiled bowl and rotate dough so entire surface is covered with oil.

6.       Cover with plastic wrap and let rise in a warm place until doubled in bulk (approximately 1 ½ hours)

7.       Divide dough into grapefruit-size balls.

8.       Roll lightly with flour, cover with plastic wrap and a tea towel.  Let rest for 30 minutes.

9.       Pat with fingertips into 8” rounds, ½” thick.

10.  Place on cookie sheet and bake in preheated 375-degree oven for approximately 10-15 minutes until lightly browned.  If tops do not brown, place under broiler for 1-2 minutes.  Watch closely!

11.  Brush tops with cool water to keep soft.
